Abstract: Preprečevanje nastajanja odpadne hrane je eden od pomembnih izzivov vzdolž celotne prehranske verige. Kako jim to uspeva in katere so težave? Kako ravnajo z odpadno hrano v živilski industriji? Kako uveljavljajo trajnostno ravnanje s hrano v različnih delih prehranske verige? Lahko odpadno embalažo vračamo v ponovno rabo? Primer zaključka prehranske verige je porabnik, ki koristi sistem javnega naročanja. Kako kakovostno je njihovo delo? To so posamezni detajli v mozaiku konkretne prehranske verige, ki omogočajo trajnostno ravnanje s hrano, embalažo in odpadki.

Marta Klanjšek Gunde, PhD in physics and associated professor of graphic technology at University of Ljubljana, works as senior researcher at National Institute of Chemistry, Ljubljana, Slovenia, within the Department of Materials Chemistry. She is the author of more than 120 scientific articles in peer-reviewed and impacted scientific journals, 4 patents, 5 chapters in scientific books and many conference presentations. She was leading several scientific research projects, mentoring 9 PhDs, many master- and diploma works. Her expertise includes advanced materials for various applications in microelectronics, solar-thermal energy conversion, smart coatings, optical security, printed electronics, and thermochromics. Her current work is devoted to R&D of printed functionalities, preferentially for smart packaging, where several challenges of food supply chain are also addressed. She initiated and co-founded the start-up company MyCol, the spin-off of the Institute, working with chromogenic materials for graphic technology applications to identify temperature changes.
